CFS Cooking Workshops: Filleting and Portioning Sustainable Black Cod

As of this week, CFS will be selling locally sourced and sustainably caught Black Cod (Sablefish) which will be available for purchase for all of the houses. First and foremost, shoutout to Dylan Earp, the Kitchen Manager at Hillegrass-Parker, for getting the ball rolling on having this item available for us to procure and sell. For extra context we are getting a very good deal on this fish, it usually sells for $12 per lb wholesale, CFS is getting it for $6 per lb and selling it to you at cost like everything else in our warehouse. In the interest of helping KM’s make good use of this newly available protein, I held a workshop at Kingman last Friday March 13th where I showed them one of the many ways in which you can process this fish into fillets and portion it out for consumption. I am planning to continue to host workshops like these at CFS in the future, with the intention of educating the membership on the really cool ingredients available for them at CFS as well as how to utilize them in a variety of cool ways both for cookshift and also for personal use. Matsumoto will be in conversation with James Beard Award-winning farmer Mai Nguyen and diversified farmer-rancher Aubrie Maze regarding how they are changing our broken industrial food system into a regenerative, local, and ethical one. Don't miss your chance to meet the author, learn about regenerative agriculture, and tour Green Valley Farm + Mill. Free admission. We welcome donations on a sliding scale to support mentorship of female farmers and books are available for pre-purchase on this website to pick-up at the event for signing.

Are you super reliable and want to do your workshift out of your house?

Committee Administrative Assistant (covers 5 hours of your weekly workshift)

Must be experienced in Google Suite and type at least 60-70 WPM, have a working laptop, and be willing to attend all scheduled weekly meetings. And you get to work with one of the best people in the BSC, Zoe!

Members: Temporary Sub-for-Pay Jobs Available!

The BSC often needs temporary workers to assist in the operations when workloads increase or when assigned workers are absent. We are now accepting applications from individuals interested in on-call job opportunities. There is no guarantee that work will be available, which departments will need workers or the duration of the assignment. We will give priority to current members, but everyone is welcome to apply.
